Egg “muffins” for the week. Such an easy dish to prepare and the eggs last up to 5 days. Precook sausage, diced onions. Scramble your eggs, add cooked ingredients (I also added salsa) pour into cupcake pan can bake at 350 for 15-20 min. I made this for dinner last night. Jordan raved about it so I thought this would be a good one to share! He also asked me to star it as a favorite and he had what was supposed to be his lunch portion as a second helping at dinner so I’d say he really did like it.

Ingredients

  • 1.5 cups chopped chicken thighs
  • 1/2 a spaghetti squash
  • 1 cup of sliced sugar snap peas
  • 1 onion thinly sliced
  • two eggs
  • 2 + 1 tbsp coconut oil
  • 1 tbsp coconut aminos (I buy this at whole foods but they also sell it on amazon, it’s a soy free alternative to soy sauce)
  • green onion for garnish

sauce

  • 4 tbsp lime juice
  • 2 cloves garlic minced (about 2 tsp)
  • tsp crushed red pepper flakes
  • 2 tbsp coconut aminos
  • 1/2 tsp ground ginger
  • tsp rice vinegar (more if you like it tangy!)
  • 1/2 cup of sunflower seed butter (I used Maranatha because it’s sugar free and that’s what they have at my grocery store, you could sub any nut butter though. I actually used a spoonful extra of almond butter too because I wanted to!)
  • dash cayenne pepper
  • 1/2 cup coconut milk (or less if you like a thicker sauce)
